Gingerbread Biscuits

This recipe has been tweaked for our intolerances and taste from The Healthy Gut Co Christmas SIBO book.

 

Gingerbread Biscuits

Serves: 10 Cooking Time: 10 mins

Ingredients

  • 2 cups almond meal
  • ¼ cup coconut flour
  • ½ teaspoon baking powder
  • 2 tsp ground ginger (3 if you like strong ginger taste!)
  • 1 ¼ tsp cinnamon
  • 1 ¼ tsp mixed spice
  • 3 tbsps honey
  • 4 tbsps coconut oil (or you can use 4 tbsps butter)

Instructions

Pre-heat oven to 180/350F and line baking sheet with baking paper

Mix all dry ingredients together in a bowl then add in baking powder

Melt honey (or butter) and coconut oil then pour into the dry mixture

Mix to combine thoroughly then form into a ball

Either using a sheet of baking paper on your bench-top or a non stick board place dough mix on it then put a sheet of baking paper over the top and roll dough to even thickness

Cut into cookie shapes of your choice and place them on your baking sheet leaving a small gap in between

Use all dough then bake in oven for approx. 10 minutes until golden brown then allow to cool on a baking rack

Store in airtight tin when completely cold
